For the cornbread, you’ll need: 1 cup cornmeal, 1 cup all-purpose flour, 1/4 cup sugar, 1 tsp. baking powder, 1/8 tsp. baking soda, 1/4 tsp. salt, 1 egg, 1 cup buttermilk, and 2 tbsp. vegetable oil.
Instructions
To get started, preheat your oven to 350°F. Next, in a large skillet over medium-high heat, brown the ground beef with the onion and garlic. Once the meat is cooked through, add the diced tomatoes and black beans and season with chili powder, cumin, coriander, and salt and pepper. Simmer for 10 minutes, then transfer to an oven-safe dish and set aside.
While the chili is simmering, it’s time to make the cornbread. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the egg, buttermilk, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
